The cook
Cooked by Hooria.
I've cooked for my family and friends for twenty years. Buraq is that food — curry, pilau and biryani made properly, from whole spices, in a kitchen I keep for nothing else. Order before ten and I'll cook it that morning.
Cooked by Hooria Khalid in her registered Cardiff kitchen.
Ground from raw
Garam masala and biryani masala, ground in the kitchen from whole spices. No bought-in blends.
Cooked from scratch
The pots go on after the 10:00 cut-off, so every box is cooked to order that morning — nothing is cooked for a guess.
Sunflower oil, never ghee
Every curry, pilau and biryani is cooked in sunflower oil.
Greek yoghurt raita
A pot in every box, made with Greek-style yoghurt. It's the one allergen in the box: milk.
Fresh that day
Meat and vegetables bought fresh; salad and raita packed the same morning as the main.
A dedicated kitchen
Used only for Buraq, and registered with City of Cardiff Council.
The name
Buraq — Arabic for lightning-quick. Order by 10, eat by 1.
The word comes from barq, lightning, and is usually translated as "a little flash of lightning" — so Buraq Flash is simply the name translating itself: you order, you pay, and it's hot on your desk by one. Buraq Table is the other half of hospitality, the shared meal that someone else hosts: your employer orders, the boxes arrive with names on, and one invoice covers the lot. Hospitality is the company's job in one word — we host lunch.
